Eggs casserole with turmeric

A delicious recipe cooked in a bain-marie.


  • For 4 people :
  • 4 eggs
  • 4 c. liquid cream
  • 6 c. tablespoon of milk
  • 16 small mushrooms from Paris
  • 1 C. coffee turmeric
  • 1 knob of butter
  • 1 half lemon juice
  • flower of salt
  • mill pepper.


Preheat the oven to 160 ° C. Boil the cream and the milk and let reduce. Add turmeric. Salt, pepper and reserve. Peel the mushrooms and fry them in the butter. Season with salt and pepper and add the lemon juice. Cook for 2 minutes, drain on paper towels. In buttered ramekins, place the mushrooms in the bottom. Pour an egg and a spoonful of turmeric cream. Cover the ramekins with a sheet of aluminum foil. Bake in a bain-marie for 12 minutes. Decorate with chopped parsley, a little fleur de sel and serve.
